The friends and family agree...very very yummy!
Fresh Apple Cake
3 eggs
1 1/2 Cup Oil
2 Cups Sugar
3 Cups Flour
1 teaspoon soda
1 teaspoon cinnamon
1 teaspoon salt
2 teaspoons vanilla
3 Cups peeled and chopped apples
1 Cup chopped nuts - optional
Mix eggs, oil, and sugar. Blend well. Add dry ingredients and blend well. Add vanilla, apples and nuts. Blend. Bake in greased/floured 10" Tube Pan @ 350 degrees for approx. 1 1/4 hours.
Icing
1 Cup Brown Sugar
1/4 Cup Milk
1 Stick Butter
Mix. Boil for 2 minutes. Pour over warm cake. Cool in Pan.

Ya know Ami - this would be a great MOPS dish... maybe we'll have to make one to bring to our next meeting! I love the 'what's for din' blog link that it was posted on... they have the best recipes!
